Mandatory levy, no membership
The Spanish interbranch organisation for the Iberian pig (cerdo ibérico): it represents breeders and processors (slaughterhouses, ham and meat plants) on an equal footing. By its own figures it covers 17,684 farms, 77 slaughterhouses and 1,184 processors. It runs the ÍTACA traceability system, issues the ham and shoulder seals of the Iberian quality standard (Norma de Calidad del Ibérico, RD 4/2014) and funds promotion, market information and research.
Its members are associations (breeders' and processors' branches); a farmer does not join directly. However, the extension under Orden APA/1275/2025 (2 Jan 2026 – 31 Dec 2030) binds every operator in Spain, member or not: a contribution is due for every pig slaughtered as Iberian with a REA certificate (breed–age–feeding). The producer share is paid by whoever delivers the pig to a Spanish slaughterhouse (if this is not the breeder, it may be passed on to the breeder). Iberian pig farmers must report daily in ÍTACA the batches leaving for slaughter.
Compulsory contribution (2026–2030, unchanged): €0.70 per pig in total, half for the producer branch and half for the processing branch. Producer share: €0.26 for every pig with a REA certificate + €0.09 per carcass whose ham/shoulder receives an ASICI seal (for hams with a PDO seal this second part is waived or reduced). The slaughterhouse collects it monthly and pays it to ASICI; the farmer sees it in the slaughterhouse settlement.
