Mandatory levy, no membership
The protection consortium for Prosciutto di Parma PDO ham, founded in Parma in 1963. It protects the name and the 'Corona Ducale' (ducal crown) mark, employs inspectors, steers the sector's economic policy and promotes the product. It has 127 member ham producers, all in the Parma production area.
The ham is made in a defined hilly part of the province of Parma, but the pigs may come from 11 regions: Emilia-Romagna, Veneto, Friuli-Venezia Giulia, Lombardy, Piedmont, Molise, Umbria, Tuscany, Marche, Abruzzo and Lazio; pig farms, slaughterhouses and cutting plants are also in the control system. The consortium's members are the ham producers. Under Law 526/1999 the consortium's costs are borne by operators in the control system whether or not they are members ('erga omnes'); the supply-regulation plan also applies to every ham producer. The website does not say that pig farms pay a separate fee — as a pig farmer, ask the control body or the consortium.
The website gives no amount for the ordinary contribution — ask directly. Under the 2027–2029 supply-regulation plan a ham producer exceeding its reference level pays an extra contribution per seal on the excess: EUR 3 for 0–3% over, EUR 8 for 3–6%, EUR 14 for 6–9%, EUR 20 above 9%.
